Step 1
Fresh kefir must be poured into a glass jar. Boil clean water in a small saucepan over low heat, remove from heat and leave for a while. Dip a jar of kefir 2/3 into water and hold it in a water bath for about half an hour. You can cover the pot with a lid during this procedure. If kefir is simply poured into a saucepan and brought to a boil, then all the useful substances and nutritional properties of the product will be lost. Therefore, the most correct way to prepare curd is to get it in a water bath.
Step 2
After a while, drain the whey obtained in this way. Wipe the remaining mass (the curd itself) through a sieve so that there are no lumps left and the product resembles a cream in consistency. Put the finished product in the refrigerator.
Step 3
Curd can also be made from sour milk. To do this, bring the pasteurized sour milk to a boil in a small saucepan and remove from heat. Strain the milk through sterile gauze folded in four, the resulting curd must be squeezed out to remove excess whey.
Step 4
If possible, prepare a calcined curd. To do this, pour fresh milk into a clean saucepan or ladle, add calcium chloride, which is available in a free pharmacy, to the contents, heat the milk and immediately remove from the heat after boiling. Remove the resulting thick mass with a spoon and rub through a sieve, place in a glass jar and refrigerate for a day.
Step 5
Curd made from kefir is less bland than milk. You can use banana as a supplement. To do this, peel the ripe fruit, mash the pulp with a fork. Beat the mixture with a blender or whisk and add it to the curd, mix gently. In this case, the addition of sugar is not required, which is very important for baby food.
Step 6
